Classic Egg Sandwich


Ingredients

Sunny Queen hardboiled eggs

Herbs of choice

Aioli

Salt & pepper

Bread

Butter

Lettuce or watercress (optional)


Method

1.

Roughly chop hardboiled eggs and herbs and combine with enough Aioli to moisten

and make a spread. Add salt & pepper to taste.

2.

Butter bread and spread egg mixture on one side. Lay lettuce or watercress on top of

egg mixture (optional).

Place second piece of bread on top. Using a bread knife cut off crusts and cut into

squares or triangles to serve.


A bunch of breakfast flowers are the perfect way to kick off the day, or to accompany your

track-side banquet.


Breakfast Flowers - Serves 8


Ingredients

3

slices lean ham

16 wonton wrappers

4 tbsp grated parmesan cheese

8

Sunny Queen eggs

8 tsp sliced shallots

Pepper


Cooking Directions

1.

Pre-heat oven to 180°C.

2.

Coat 8 extra large muffin cups with a spray of oil. Put a wonton wrapper in each cup.

Repeat with second wonton wrapper, placing on an angle in each muffin cup to form a

flower shape.

3.

Sprinkle 1 tsp grated cheese into each wonton cup. Break one egg into each cup. Top

with diced ham. Sprinkle sliced shallots over the top. Season with pepper.

4.

Bake for 15-20 minutes until wrappers are golden and eggs are set. Cover with foil if shells

brown too quickly

Cooking Directions

1.

Cut shelled, hard boiled eggs in half lengthwise.

2.

Remove the yolk and mash thoroughly.

3.

Refill the hole with the mashed yolks combined with one of the

following suggestions (not too much –  remember the hole is

only small). 


Cottage cheese and chives


Finely chopped chicken with tomato sauce


Chopped cucumber with tomato and mayonnaise
